If you know me you already know that I am a true lover of ALL things red velvet.  I mean from Red Velvet Cake to cookies to brownies to pancakes.   I think it not only has to do with the flavor but also the color is just so pretty, and you know you eat with your eyes first.  SO what is better then bright red cookies or cake… NOTHING! 🙂 You see February is an important month for me.  It’s the month I started this little thing we call food blogging.  I didn’t even realize that it had been 5 years last Friday, the 7th until I looked at my calendar and saw the date.  crazy that it’s been so long.  I mean I never expected to still be doing it or even thought that it would be something that I enjoyed doing for so long.  I love sharing old and new recipes with you guys and I love sharing a part of my life with you all.  I hope to continue to share with you guys, that’s why I thought why not share my love of red velvet with you.   Red Velvet Cookies with White Chocolate Chips v3

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

I know Red Velvet Cookies with White Chocolate Chips.  Yep, I said it and I made it.  These cookies are so soft and moist and are simple and easy to make.  Yes, these start out with a boxed cake mix but get transformed into a cookie, pretty genius!  I added white chocolate chips because they are my daughter’s favorite.  These cookies were such a hit and they are perfect for not only celebrating with me 5 years of food blogging but also for those that special someone for Valentine’s Day, which I hear is this Friday!

Red Velvet Cookies with White Chocolate Chips

Prep Time: 10 minutes

Cook Time: 20 minutes

Yield: makes

Red Velvet Cookies with White Chocolate Chips

Soft chewy red velvet cookies with white chocolate chips mixed in.

Ingredients

  • 1 box Red Velvet Cake Mix (I used Duncan Hines)
  • 2 tablespoons All-Purpose Flour
  • 2 large Eggs
  • 1/2 cup Vegetable Oil
  • 1 teaspoon Vanilla Extract
  • 1⅓ cups White Chocolate Chips, divided

Directions

  1. Preheat oven to 350 degrees F.
  2. In a large bowl combine cake mix and flour. Whisk until clumps disappear. In the bowl of a stand mixer, mix together cake mix, flour, eggs, oil and vanilla extract. Mix until smooth. Add in ½ cup white chocolate chips.
  3. Press 3-5 white chocolate chips onto the top of each cookie dough ball. Be careful not to flatten the cookies.
  4. Bake for 11-13 minutes or until the cookies begin to crackle. Let the cookies cool on the baking sheet for 5 minutes. Remove from baking sheet to a wire cooling rack and cool completely.
