Banana, Peanut Butter & Nutella Stuffed French Toast

I have a love affair with Nutella… sshhhhh don’t tell my husband!

Especially when I add bananas with Nutella…. Mmmmmm.  For a snack I actually just cut up bananas and drizzle Nutella on top.  You know where each and every piece of banana has some of that delicious chocolate goodness.

Now as a child peanut butter sandwiches were my favorite.  Especially when I added strawberry jam on it, oh so good.  But this time I wanted to do something different.  See, I make french toast all the time and I wanted to make these a little different and extra special.

I decided to add all my favorites together and stuff them into a pillow soft challah bread dipped in my french toast batter.

Let’s just say that these were supercalifragilisticespialidocious…. (in my Mary Poppins voice) ;-).

Enjoy!

Banana, Peanut Butter & Nutella Stuffed French Toast

Ingredients

6 extra-large eggs

1 1/2 cups half-and-half or milk

1 teaspoon cinnamon

1/2 teaspoon pure vanilla extract

1 tablespoon granulated sugar

1 large loaf Challah or Brioche bread

Bananas (as many as you like)

Peanut Butter, creamy

Nutella

Unsalted butter

Vegetable oil

Directions

Preheat the oven to 250 degrees F.

In a large shallow dish, whisk together the eggs, milk, cinnamon, vanilla, and sugar.  Slice the challah in 3/4-inch thick slices.

Now make a slice in the middle of the challah slice and spread peanut butter on one side, nutella on the other and then sliced bananas.

Soak all of the challah slices in the egg mixture for 2 minutes, turning once.

Heat 1 tablespoon butter and 1 tablespoon oil in a very large saute pan over medium heat. Add the soaked bread and cook for 2 to 3 minutes on each side, until nicely browned. Place the cooked French toast on a sheet pan and keep it warm in the oven. Fry the remaining soaked bread slices, adding butter and oil as needed, until it’s all cooked.

Place on platter drizzle melted peanut butter and nutella on top.  Dust powdered sugar and sliced bananas on top.

Enjoy!
