Breakfast Potatoes.

Is there really anything better than a bowl full of these delicious caramelized babies.

The key ingredient to these is not just that it has bacon which in my opinion can make anything GREAT… but that it has maple syrup added in it at the end of the cooking process.

So simple. So Easy.  So Tasty!

You don’t have to make these just for breakfast… they can be eaten any time of the day… lunch, dinner or even a snack.  Just know that they’ll be devoured no matter what time of day it is.

Breakfast Potatoes

Breakfast Potatoes that will have your mouth watering!

  • Total Time: 30 minutes

Ingredients

Scale
  • 34 medium Golden Potatoes – skin on
  • 1 Tablespoon bacon fat, (plus more if needed)
  • 3 pieces of Bacon (reserve the bacon fat, trust me you will be happy you did)
  • 2 garlic cloves, minced
  • 1/2 medium sized Onion, chopped
  • 3 Tablespoon Red Pepper, chopped
  • 12 Tablespoon pure Maple Syrup
  • 1 teaspoon Seasoned Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Garlic Powder
  • 1/2 teaspoon Paprika
  • chopped scallion for garnish

Instructions

  1. First fry your bacon. Once it is done cooking remove from skillet and place to drain on paper towel. Keep the bacon grease for your potatoes.
  2. Wash the potatoes and cut into square pieces. Try and keep all the pieces the same size so that it will all cook evenly.
  3. Next, using the same skillet that you fried your bacon in, heat 1-2 tablespoons of bacon grease over medium-high heat. If you do not have enough bacon grease you can add olive oil or vegetable oil.
  4. Once the oil is hot, add the potatoes tot he skillet. Season with salt, pepper, paprika, garlic powder.
  5. Cook for 10 minutes, stirring the potatoes often, until brown. If needed, add a tablespoon more of oil.
  6. Chop up the onion, garlic cloves, and red pepper. Then add to the potatoes.
  7. Let the garlic cook until fragrant, about one minute.
  8. Just before serving, drizzle over the maple syrup and toss. Allow it to caramelize the potatoes for a minute or 2.
  9. Serve and Enjoy!
