Callaloo Balls
 For those of you who do not know what callaloo is let me give you a brief definition.  

Callaloo is a Caribbean dish that is most popular in Trinidad and Tobago, with variants in Guyana, Barbados, Guadeloupe, Grenada, Haiti, Dominica, and Jamaica. The foundation of Callaloo is green leaves and vegetables, such as Chinese spinach or Indian kale, ordinary spinach, or even Swiss chard.

Callaloo Fritters

2 cups of callaloo (cut up)

1/2 an onion (diced)

1 tomatoe

1 tablespoon of margarine

1 1/3 cups of all-purpose flour

1/4 teaspoon of salt

1 teaspoon of salt

1 large egg

Vegetable oil for frying

 

Heat margarine and sauté onion and tomatoes.  

Add callaloo and steam for about 5 to 10 minutes.  Set aside to cool.

Sift all-purpose flour with baking powder and salt.

Beat egg and add to cooked callaoo.

Combine egg and callaloo with flour mixture.

Heat frying pan with vegetable oil at about 1/2 inch.

Drop by tablespoon in hot oil and fry.

Serve HOT.
