Cheese Muffins

My daughter, Kayla and I wanted to make Cheese Muffins this morning to eat with our breakfast.  I found this wonderful recipe from one of my favorite chef bloggers, Ree (PW).  She really does have some wonderful recipes, guys so go check her out!

Cheese Muffins

These muffins are so moist and cheesey they just melt in your mouth.

 

Dry Ingredients

Start off by whisking all the dry ingredients together: 1 1/2 cups flour, 1 1/2 tablespoons sugar, 1 tablespoon baking powder, and 1/2 teaspoon salt.

 

Then according to Ree, add 3 hefty cups of Colby/Jack shredded  cheese to the dry ingredients.  Making sure to mix all of it together. YUMMM:-)

 

In a separate bowl mix together the wet ingredients: 1 cup milk, 1 large egg, and 1/4 cup (1/2 stick) melted butter.  Make sure to use salted butter for this.

 

Then add the wet ingredients into the flour and cheese mixture.

 

Give it a good stir…. perfect time to ask little helpers for their assistance. 😉

 

What a GREAT helper!

Notice how the whole mixture comes together and becomes sticky, Perfect!

 

Make sure to butter a 12 muffin pan, then spoon mixture into each spot.

Then pop them into a 350 degree oven for about 25 minutes. 

Then just wait……

Cheese Muffins

1 1/2 cups flour

1 1/2 tablespoons sugar

1 tablespoon baking powder

1/2 teaspoon salt

3 cups shredded colby-jack cheese

1 cup milk

1 egg

1/4 cup (1/2 stick) melted butter, salted

 

Whisk together dry ingredients, then stir in cheese.

In a separate bowl, whisk egg, milk, and butter together. Pour milk mixture into dry ingredients and stir with a spoon to combine.

Bake in greased muffin tins at 375 degrees for 20-25 minutes.

Makes 12.
