Cheesecake Chocolate Chip Cookie Bars

I think my family and I have a sweet tooth.  I mean we love food and all but when it comes to desserts we by far have a BIG sweet tooth.

After every meal I’m asked “What’s for dessert?”

We love cookies… chocolate chip cookies of course, especially when there soft and chewy and right out of the oven.

I saw this recipe that included not only soft chocolate chip cookies but a creamy cheesecake filling that was sandwiched between the cookie layers.  All you do is press half of the cookie dough into the bottom of the pan, then pour the cheesecake mixture over the top and then the remaining cookie dough is shaped into discs and placed over the cheesecake.

When the cookie bars are baked they rise and spread and become a delicious mixture of cookies and cheesecake.

Chill them and then serve….

Let’s just say Delicious!

Make the cookie dough first.  Mix together the butter, shortening, both sugars, vanilla, salt and cider vinegar. Beat until creamy and combined. Beat in the egg, baking soda and flour until just combined. Stir in the chocolate chips. Divide the dough into two equal portions. Set aside.

In a 9×13 glass baking pan, press 1/2 of the chocolate chip dough evenly into the bottom of the pan. Spread the cream cheese filling over the top of the cookie dough in the pan.

With the remaining cookie dough, flatten chunks of the dough in between your hands to form small disks. Place them all over the top of the cream cheese mixture. Bake at 350 degrees F. for 28-30 minutes, or until the top is golden brown and cooked through.

Ingredients

Chocolate Chip Cookie Dough:

  • 1/2 cup Butter, softened
  • 1/2 cup Vegetable Shortening, butter flavored
  • 1 cup Brown Sugar, light
  • 1/2 cup Granulated Sugar
  • 2 teaspoons Vanilla Extract
  • 3/4 teaspoon Salt
  • 1 Tablespoon Cider Vinegar
  • 1 large Egg
  • 1 teaspoon Baking Soda
  • 2 cups All-Purpose Flour
  • 2 cups Semi-Sweet Chocolate Chips

Cream Cheese Filling:

  • 1 (8 ounce) package Cream Cheese, softened
  • 1/2 cup Granulated Sugar
  • 1 large Egg
  • 1 teaspoon Vanilla Extract

Instructions

  1. In a large bowl, using a hand mixer, beat together the butter, shortening, both sugars, vanilla, salt and cider vinegar. Beat until creamy and combined.
  2. Beat in the egg, baking soda and flour until just combined. Stir in the chocolate chips. Divide the dough into two equal portions. Set aside.
  3. For cream cheese filling: In a medium bowl, beat the cream cheese and sugar until creamy and combined. Then beat in the egg and vanilla.
  4. In a 9×13 glass baking pan, press 1/2 of the chocolate chip dough evenly into the bottom of the pan. (You’ll need to use your clean hands to do this) Then spread the cream cheese filling over the top of the cookie dough in the pan. With the remaining cookie dough, flatten chunks of the dough in between your hands to form small disks. Place them all over the top of the cream cheese mixture. (Try to place them as close as possible, but they don’t have to touch)
  5. Bake at 350 degrees F. for 28-30 minutes, or until the top is golden brown and cooked through.
  6. Cool bars completely before serving. Store any leftovers covered in the fridge.
