What is it about Publix that makes you just want to buy a sub or a wrap?  I tell you every time I walk in there I tell myself ” OK this time I’m just gonna run in and get what I need… No stopping by the sub station and getting sucked in.”  But for some reason that never works out.  This time however, I was prepared… I told myself that instead of spending money on buying a sub or a wrap I was just going to go home and make it myself…. Ah Hah!  Pretty Smart eh….

 

So I bought some chicken tenders and made them like I would any ordinary fried chicken tenders (recipe below) and added some yummy shredded cheese, lettuce, onions, tomatoes, and honey mustard sauce.  It was so yummy and perfect.  It definitely hit the spot and would be a great dish to make for outdoor picnics… which we love to do as a family.

Chicken Tender Wrap

Ingredients

1 pound chicken tenderloins

1/2 cup buttermilk

1 egg, large

2 tablespoons Cajun seasoning, divided

1 teaspoon white pepper, divided

1 teaspoon paprika

1 cup all-purpose flour

Peanut oil for frying

Wrap Toppings

Tortilla wraps

Shredded cheese

Diced tomatoes

Sliced Red Onions

Directions

In a large bowl whisk egg, buttermilk and 1 tablespoon of Cajun seasoning, paprika, and 1/2 teaspoon white pepper.  Add chicken tenderloins and mix until fully coated. Cover and refrigerate for at least 2 hours.

Combine flour, remaining Cajun seasoning and white pepper in a large freezer bag. Take out chicken tenderloins and remove from buttermilk mixture, allow excess to drip off.

Place chicken tenders in plastic bag and shake to coat.

In a large pan, heat oil over medium heat. Once the oil is hot, add chicken tenderloins and fry until golden brown, about 3 minutes per side.  (Remember to not overcrowd your chicken and allow to cook completely) Once browned, remove from fryer, lay on paper towels, drain, and sprinkle with a little salt.

Assembling the Chicken Tender Wrap

Warm tortilla wrap in microwave for 10-15 seconds.  Then drizzle honey mustard sauce.  Chicken tenders, sprinkle cheese, lettuce, tomatoes, onions, and more honey mustard sauce.  Wrap and enjoy!
