Chocolate Chip Cookie Pie

February is one of the most favorite months of the year for me… Do you know why???  It’s the month of the year where we celebrate the beginning of my blogging career. :-)   Four years ago today I started this little thing called blogging, food blogging to be exact.  ThatsSoYummy has been my baby for four years and through the good and the bad I absolutely LOVE it!  From the very first post I ever shared on ThatsSoYummy to today I have learned so much and continue to grow in blogging, recipe developing and sharing my voice.

I thought that today would be the perfect day to share with you something so delish that I think you all would just love, Chocolate Chip Cookie Pie… Life is always better with pie!  It’s funny I make this recipe all the time and just realized that I have never shared it with you guys so here it is, a little something from a little blogger, Bakerella (you may know her as the Queen of Cake Pops ;-) )

Well back to the subject on hand of celebration… here’s a slice of pie for you to enjoy!

Prep Time: 15 minutes

Cook Time: 55 minutes

Yield: 12 servings

Chocolate Chip Cookie Pie and Happy 4th Birthday ThatsSoYummy!

Ingredients

  • 1 unbaked 9-inch (4-cup volume) Deep-Dish Pie Shell
  • 2 Large Eggs
  • 1/2 cup All-Purpose Flour
  • 1/2 cup Granulated Sugar
  • 1/2 cup Light Brown Sugar, packed
  • 3/4 cup (1 1/2 sticks) Butter, softened
  • 1 cup (6 ounces) Semi-Sweet Chocolate Chips
  • Serve with ice cream (optional)

Directions

  1. Preheat oven 325 degrees F.
  2. Beat eggs in large mixer bowl on high until foamy.
  3. Beat in flour, granulated sugar and brown sugar. Beat in butter.
  4. Stir in chocolate chips, then spoon into pie shell.
  5. Bake for 55-60 minutes. Cool on wire rack. Serve warm with vanilla ice cream and chocolate sauce!
