Chocolate Chip Sour Cream Pancakes

Do you ever have those morning where you wake up and think to yourself “What am I going to make for breakfast this morning?”

Even though it’s summer time my husband and I really don’t have a lot of time to spend with the kids in the mornings so when the weekend rolls around I always try and make something special and quite yummy.  Pancakes are one of the many favorites in our house and I love making Buttermilk Pancakes.

Except that when I woke up I remembered oh yea that buttermilk is going to be used for a different recipe.  Of course I didn’t feel like running to the store to buy some so I made an alternative… these Chocolate Chip Sour Cream Pancakes.

You may remember when I shared a recipe for Sour Cream Pancakes a while back– well now picture those pancakes with Chocolate Chips!

Jackpot!!!!

I used Gaby’s recipe, (What’s Gaby Cooking) for Sour Cream Chocolate Chip Pancakes and they were a hit.

I think there a few things you could add to pancakes or petty much anything that would make me a happy camper– and chocolate chips are on the top of the list.

Just in case you decide to go on a pancake making frenzy, here are some more awesome Pancake Recipes:

  • Cook Time: 25 minutes
  • Total Time: 35 minutes
  • Yield: serves 6

Ingredients

Scale
  • 1 cup milk
  • 3/4 cup sour cream
  • 2 eggs
  • 4 tablespoons butter, melted
  • 1/2 teaspoon vanilla extract
  • 2 cups all purpose flour
  • 3 Tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips

Instructions

  1. Whisk the milk, sour cream, eggs, butter, and vanilla smooth.
  2. Stir in the flour, sugar, baking powder, baking soda, and salt until the dry ingredients are incorporated and the batter is smooth and all lumps are gone.
  3. Heat a non-stick skillet on medium heat and coat it with non-stick spray.
  4. Pour 1/4 cup of the pancake batter onto the pan. Watch for the pancake to form bubbles around the edges of the pancake and then gently flip the pancake over and cook for about 45 seconds more until both sides are just slightly golden.
  5. Repeat this process for the remaining batter, spraying new non-stick spray before each pancake. Serve immediately.
