What is it about cookies that just make me smile.  Do you ever get that tingly feeling also?  Maybe its just me but the smell and thought of freshly baked cookies not only warms my heart but makes me giddy and smile from ear to ear… and if you know me you already know that’s a pretty BIG smile!

 

Chocolate Chunk Caramel Cookies are what these are.  Or if you want you can call them the 4 C’s.  :-)   A cookie for all chocolate lovers and those who want to add a little extra also… like caramel sea salt!  These cookies aren’t only rich in flavor but soft and chewy with a salty gooey caramel filling inside.  A great ending to a long day!  These babies would be the belle of the ball for any cookie swap party or as a holiday gift.

 

Wouldn’t your face light up if I came to you with a box of these scrumptious babies wrapped up in a pretty bow?

 

I’m not one for eating cookie dough, but I had to contain myself to not eat this all by itself.

Chocolate Chunk Caramel Cookies

A cookie for all chocolate lovers and those who want to add a little extra also... like caramel sea salt!

Ingredients

  • 1 cup (2 sticks) Butter, softened
  • 3 cups Brown Sugar
  • 2 Large Eggs + 2 Large Egg Yolks
  • 1 tablespoon Vanilla Extract
  • 2 cups Cake Flour
  • 2 cups All-Purpose Flour (you can substitute and use all with all-purpose flour)
  • 1 cup Dutch Process Cocoa Powder
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 2 cups Semi-Sweet Chocolate Chunks

Directions

  1. Preheat oven to 350ºF.
  2. Melt the butter and sugar together until bubbling. Stir in the eggs and vanilla. Sift in the flours, cocoa, soda, and salt and mix until well combined. Add the chocolate chunks.
  3. Form large balls of dough into the shape of a nest. Nestle a wad of caramel in the nest, leaving a small tail at the top. Roll the cookie around the ball of caramel and then swirl the tail around the top.
  4. Bake for 8-12 minutes until done.
