Rice is such a staple with Mexican dishes.  We love eating Mexican food at home.  When I was pregnant with KK that’s all I ate was Mexican food.  I think I ate more quesadillas and fajitas during that time then in my whole life.  To this day Mexican is one of my favorite cuisines.


and Yes, it is also one of KK’s favorites also… (I guess I had something to do with that)

Cilantro Lime Rice is such a great addition to any Mexican meal.  Adding fresh lime juice and cilantro gives any plain ice lots of flavor and definitely shakes things up a bit.  Serve it with quesadillas, fajitas, burritos, tacos and especially Chicken Burrito bowls (I can’t wait to share the recipe with you this week).





Cilantro Lime Rice

Prep Time: 2 minutes

Cook Time: 20 minutes

Yield: 6 servings

Cilantro-lime rice is the perfect side dish for any meal especially any Mexican meal.


  • 1 teaspoon vegetable oil or butter
  • 2 teaspoon fresh cilantro, chopped
  • 2 cups white basmati rice
  • 4 cups water
  • 1 teaspoon salt
  • 1 freshly squeezed lime juice


  1. In a small heavy pot, add rice, water, 1/2 tsp oil + salt. Boil on high uncovered for 12 minutes.
  2. Fluff rice with a fork. Stir in cilantro and lime juice. Add additional salt to taste. Serve hot or at room temperature.
