Funfetti Pudding Cookies

Did you know that you can make cookies out of a box of pudding mix? Well you can… pretty cool right!!!! Adding the pudding mix to the cookie batter makes the cookies soft and chewy just the way I think cookies should be.  I’m not really a crunchy cookie type gal.

I also added vanilla and butter extract to the mix to give it that vanilla cake flavor also.  Plus when you add sprinkles, who doesn’t like a little sprinkles to their cookies.  It just makes it Fun and Pretty!

These cookies were such a hit the kids asked for them for snack in their lunch boxes and dessert that night.  In less than 24 hours they were all gone, actually devoured by hungry boys and girls. I definitely plan on making more pudding cookies in the future but different flavors and add-ins.  Stay tuned because the pudding mix roll has just started… 🙂

Funfetti Pudding Cookies

Soft and chewy vanilla pudding cookies that tastes just like cake and filled with colored sprinkles.

  • Cook Time: 10 minutes
  • Total Time: 20 minutes
  • Yield: 20 cookies 1x

Ingredients

Scale
  • 1/2 cup (1 stick) Unsalted Butter, softened
  • 1 cup Granulated Sugar
  • 1 Egg, large
  • 1 teaspoon Vanilla Extract
  • 1/2 teaspoon Butter Extract
  • 1/4 teaspoon Salt
  • 1 1/2 teaspoons Baking Soda
  • 1 small box (3.4 ounce size) Vanilla Pudding Mix
  • 1 1/2 cups All-Purpose Flour
  • 1/2 cup Rainbow Sprinkles

Instructions

  1. Preheat oven to 350 degrees and line cookie sheets with parchment paper or silpat baking mats.
  2. Beat butter and sugar in a stand mixer until fluffy, just a few minutes. Then add in egg, vanilla and butter extracts. Beat in salt, baking soda, and pudding mix. Add flour and mix slowly until completely combined.
  3. Drop cookies onto prepared cookies sheets. Bake for 7-8 minutes, until they just start to get a teeny bit golden around the edges but still still light in color.
  4. Cool for 5 minutes then remove and cool completely on cookie rack.
