How to make a Frittata with Eggland’s Best Eggs

Have you ever heard of the saying “everything but the kitchen sink?”  That saying is used when you add so many ingredients to a dish but the only thing you excluded was literally the kitchen sink.  In frittata’s you can add so many different ingredients, practically any vegetables or meats work beautifully in them.

For some of you, frittata might sound too fancy a word to say or even try to make, but the truth is that frittata’s are so easy and simple to make and they an be made for breakfast, lunch or dinner.  If your ever in a bind and have no idea what to make for dinner, trust me frittata’s will save you.

Some common add-ins for frittata’s are: potatoes, mushrooms, spinach, kale, bell peppers, leftover pasta, leftover rice, shredded chicken, beef, or pork bacon ham

As you can see the list is endless… As for my eggs, I chose to use Egglands Best Eggs!  These eggs stay fresher than other eggs and are delicious!

I opted for a frittata for two, with very simple ingredients, bacon, cheese, onions, and tomatoes.   I served it with a toasted English muffin and sliced fruit! A perfect Valentines breakfast for your special valentine!

How to make a Frittata

A frittata for two with simple ingredients!

  • Prep Time: 10 minutes
  • Cook Time: 12 minutes
  • Total Time: 22 minutes
  • Yield: 2 servings 1x

Ingredients

Scale
  • 3 Large eggs
  • Salt and Black Pepper
  • 1/2 cup Shredded Cheddar Cheese
  • 5 strips Cooked Bacon
  • 1/3 cup Onion, chopped
  • 1/3 cup Tomato, chopped
  • Butter
  • Chopped Scallion (for garnish)

Instructions

  1. Preheat oven to 350 degrees.
  2. Cook bacon strips until crispy, then drain on paper towel. in a small bowl crack your eggs and whisk. Add salt and black pepper. Next add in your shredded cheese.
  3. In a small skillet, melt 1 tablespoon of butter. Add in the chopped onions and tomatoes. Saute until onions are translucent. Chop the cooked bacon and add to skillet. Make all the ingredients are evenly distributed in skillet and not on one side.
  4. Next, pour your egg mixture over the cooked vegetables. Tilt the pan to make sure the eggs settle evenly over all the vegetables. Cook for a minute or two until you see the eggs at the edges of the pan beginning to set.
  5. Place the pan in the oven and cook for 10-12 minutes until the edges are set and the center is cooked through. You can test with a knife in the center and if your egg is still runny put back in oven for a few more minutes. Just make sure to remove it before the eggs start to brown.
  6. Cool for five minutes, then slice into wedges and serve.
