KK’s Favorite Pizza (Cheese and Pepperoni)

KK's Favorite Pizza

Was there ever a food that you ate a whole lot of when you were pregnant?  With my daughter I ate a lot of Mexican food… but with my son it was definitely Pizza.  I rememeber there was a little pizza shop I would run to in Miami all the time for a slice or two.  Morning, noon or night pizza was always on the brain.  I think that is why he loves pizza so much.

Now you may be wondering if my son loves pizza so much why did I name this recipe KK’s favorite pizza?  Well here’s the thing, my daughter was the one who not only helped me with the whole pizza making process but she literally sat at the chair and ate THREE slices.

Now if any of you have seen my daughter you already know she is a little thing… little or not she cleaned up theose slices and asked me when were “WE” going to make pizza again?!  I just laughed and said soon hunny!

Hope you enjoy it as much as she did 😉

Position oven rack in the middle setting and place a rimless baking sheet (or pizza stone) on the bottom rack. Preheat oven to 450° degrees.

Start with a prepared pizza dough.  I was running low on time so I purchased pre-made dough from the grocery store but you can make it at home as well.

Now its time to put your lil helper to the work… Roll out pizza dough on a lightly floured surface, starting at the center and working outwards, use your fingertips to press the dough to 1/2-inch thick. Turn and stretch the dough until it will not stretch further. Let the dough relax 5 minutes and then continue to stretch it until it reaches your desired shape… we went with rectangle 🙂

Next is rolling time, you really don’t need to roll it out but my princess wanted it to be thin so we busted out with the rolling pin. You see even they can be a master in the kitchen.

Place the rolled out pizza on a baking stone or a flat baking sheet.  Then spread homemade pizza sauce in an even layer over pizza dough, leaving a 1/4-inch border.

Once the sauce has been spread all over add your toppings.

My kids and husband are definite fans of pepperoni and fresh mozzarella cheese…

Brush the top of the dough with olive oil (to prevent it from getting soggy from the toppings).

soggy pizza = nasty pizza…. not yummy!

Last but not least sprinkle grated parmesan cheese on top…. a lil more cheese won’t kill you 🙂
