Do you have the best recipe using Eggland’s Best Eggs? Our friends at Eggland’s Best are searching for the most creative and delicious recipes from your kitchen that celebrate Eggland’s Best eggs. Does your recipe highlight the best local ingredient from your state PLUS Eggland’s Best eggs?

Enter the 2016 Eggland’s Best “America’s Best Recipe” Contest

All you have to do is create a recipe that not only includes two whole Eggland’s Best eggs but also a locally-sourced ingredient(s) made popular by your state.  For example Georgia has peaches, Maine has lobsters and Florida has oranges.  Choosing Eggland’s Best eggs over ordinary eggs, are not only fresher, but also tastes better, and contains more vitamins and nutrients. Compared to ordinary eggs, each Eggland’s Bestegg offers four times more vitamin D, more than double the omega-3s, and contains 25% less saturated fat.

Here’s what you need to know:

You may enter up to two recipes in each of these four categories:

  1. Breakfast/Brunch
  2. Appetizer
  3. Main Course
  4. Dessert

Once you have your recipe ready for submission, you can head on over to the Eggland’s Best “America’s Best Recipe” Contest and submit your original recipe or recipes. But you only have until April 29… so don’t miss the deadline.

Recipes will be judged based on taste, creativity, and the inspiration behind the local recipe ingredients. After state winners are selected, Eggland’s Best will call on all Americans to help narrow down the Best in State recipes to five Best in Region winners.

The Best in Region recipes will be revealed on the Eggland’s Best website where EB fans will have the chance to vote for America’s Best Recipe!

The Grand Prize winner will be awarded $10,000 and a year’s supply of Eggland’s Best eggs, and Best in Region winners will receive $1,000 each!

Lemon Loaf time… 🙂

Living in Florida we definitely have easy access to all things citrus.  I mean we are kinda known for our oranges but also have tons of lemons and grapefruit around.  This time I wanted to for sure make something sweet, tangy and perfect for the change in the season.  I mean winter is finally finished, the sun is out, the flowers are blooming.

Lemon Loaf just sounded perfect to make with Eggland’s Best Eggs.

Lemon Loaf

Prep Time: 10 minutes

Cook Time: 55 minutes

Yield: serves 10

A moist delicious sweet and tangy loaf topped with the most delicious lemon frosting!

Ingredients

    Loaf
  • 3 large Eggs
  • 1 cup Granulated Sugar
  • 1 cup Greek Yogurt
  • 1/2 cup Vegetable oil
  • 2 tablespoons Lemon Zest
  • 2 tablespoons Lemon Extract
  • 1 1/2 cups All-Purpose Flour
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Salt, or to taste
  • Lemon Frosting:
  • 3 Tablespoon Butter, softened
  • 1½ cups Powdered Sugar
  • 3 Tablespoons Lemon Juice
  • 1 teaspoon Lemon Extract

Directions

  1. Preheat oven to 350F. Spray a 9x5-inch loaf pan with floured cooking spray, or grease and flour the pan; set aside.
  2. For Loaf:
  3. In a large bowl, add the eggs, sugar, sour cream, and whisk vigorously until smooth and combined.
  4. Drizzle in the oil while whisking to combine.
  5. Add the lemon zest, lemon extract, and whisk to combine. Note - I used 2 tablespoons of lemon extract. **Don't use lemon juice in place of lemon extract because it's not strong enough and the acidity can alter the overall results.**
  6. Add the flour, baking powder, salt, and stir until just combined, don't overmix. Some lumps will be present and that's okay, don't try to stir them smooth.
  7. Turn the batter out into prepared pan, smoothing the top lightly with a spatula. Bake for about 50 to 55 minutes, or until browned, set, and toothpick inserted in the center comes out clean or with no batter.
  8. Allow loaf to cool in pan on top of a wire rack until completely cooled, for about 2 hours.
  9. For the frosting:
  10. Combine the butter, lemon juice and lemon extract with hand or stand mixer. Gradually add the powdered sugar, and beat until smooth and creamy. Evenly spread the frosting over the top of the loaf. Refrigerate to let frosting set completely before slicing. Refrigerate any leftovers in an airtight container.
