Loaded BBQ Chicken Nachos

These ultimate loaded BBQ Chicken Nachos are super easy and super quick to make, you can have them done in a blink of an eye or in our case before the first touchdown… oh yea did I forget to mention the Big Game is this upcoming weekend!

While the majority of you all are excited about the game–Me… I’m just excited about the Food… lots and lots of it! 😉

These nachos may just might be my favorite nachos of all time.  A mountain of tortilla chips pilled high filled with sweet smokey barbecue chicken, lots of cheese and all of the fixings you can think of!  We all know that nachos can be a number of ways and this way will no doubt be a crowd pleaser.

These are a super easy dinner idea or, if you are having a party or get-together, serve them as an appetizer.

Nacho making time…

Start with a bottom layer of tortilla chips and add some barbecue chicken.  I just grilled some chicken breasts I had seasoned in my fridge but you can use either left over chicken, rotisserie chicken, or chicken tenders.

Anything will work…

Next, sprinkle on a good amount of cheese…

Add the second layer of tortilla chips…

Now here’s where you mix it up instead of just adding the chicken like we did at the beginning add cheese first…

Then add more chicken… and then lots of cheese. 🙂

For all of those who don’t like the fixings {my kids for example} you can bake the nachos just like this for 5 to 8 minutes.

But…

If you’re like me then you will take the nachos out after the cheese has melted and add the red onions, tomatoes, black olives, green onions and drizzle more barbecue sauce and light ranch dressing.

Loaded BBQ Chicken Nachos

A mountain of tortilla chips pilled high filled with sweet smokey barbecue chicken, lots of cheese and all of the fixings you can think of!

  • Prep Time: 10 minutes
  • Cook Time: 15 minutes
  • Total Time: 25 minutes
  • Yield: serves 4

Ingredients

Scale
  • 1 Bag of Tortilla Chips
  • 2 BBQ Chicken Breasts, skinless & boneless
  • 2 cups shredded Colby Jack Cheese, or more if you’re like me
  • 1/3 cup Red Onion, diced
  • 1 Tomato, chopped
  • 8 oz. sliced Black Olives
  • 1/4 cup Green Onions, diced
  • BBQ Sauce more is needed for drizzling on the top
  • Drizzle Ranch dressing (optional)

Instructions

  1. Season and cook your chicken breasts. I season mine with garlic salt, black pepper, paprika, olive oil, and worchestshire sauce. Once the chicken is cooked though place to the side and allow to rest a few minutes.
  2. Chop up chicken breasts into bite sized pieces and combine with favorite 1/2 cup barbecue sauce.
  3. It’s time to layer the nachos. I like to get fill the nachos in layers so that there is chicken and cheese and onions and olives in every bite. Place a handful of chips as the first layer, then add some of the barbecue chicken and onions, and sprinkle with cheese. Depending on size of pan it will depend on how many layers you can make. I usually just make two.
  4. For the second layer, add more chips, then this time add cheese, barbecue chicken, and more cheese. Place in a 350 degree oven to cook for 5-10 mins or until cheese is melted.
  5. Once cheese is melted remove from oven then add the chopped tomatoes, red onion, tomato, black olives, and green onions. Lightly drizzle more barbecue sauce and ranch dressing…Serve hot and ENJOY!
