Oh So Yummy Lemon Bars!

Ever just have a craving for a fresh, sweet, and tasty dessert?

I did when I was finalizing my dessert menu for ThatsSoYummy’s Food and Wine Mixer.  Since I was having something chocolatey I wanted to also have something that was different but still sweet.

I then thought of Lemon Bars…. they are sweet and definitely NOT chocolate.

When I mentioned to one of my girlfriends, that I was thinking of making Lemon Bars she said how she hadn’t had them in the longest time and thats when I knew they were PERFECT!

I think the reason why these sweet treats are so refreshing is the combination of its shortbread crust with its tangy lemony filling.  Especially when sprinkled with more powdered sugar… how can you ask for anything more.

These were such a hit at the Mixer that I had guests asking me for my recipe, thats when I knew I had a Hit on my hands.

I hope you all enjoy just as much as they did!

 

Follow these easy steps:

First Start off by preheating the oven to 350 degrees F and place rack in center of oven. Grease with butter (or use a cooking spray) a 8 x 8 inch pan.

 

To Make the Crust:  In a large bowl cream the butter and sugar until light and fluffy.  Add the flour and salt and beat until the dough just comes together. Press into the bottom of your greased pan and bake for about 20 minutes, or until lightly browned. Place the baked crust on a wire rack to cool while you make the filing.

 

 

To Make the Filling: In a large bowl, beat the sugar and eggs until it becomes nice and smooth. Add the lemon juice, the zest and stir to combine. Fold in the flour. Pour the filling over the shortbread crust and bake for about 20 minutes, or until the filling is set.  

 

Lemon Bars

Before serving allow the lemon bars to cool.  Dust them with powdered sugar and cut them into squares.

Crust:

1/2 cup (1 stick) unsalted butter, softened room temperature

1/4 cup of confectioners/powdered sugar

1 cup of all-purpose flour

1/8 teaspoon of salt

Filling:

1 cup of granulated white sugar

2 large eggs

1/3 cup of fresh lemon juice 

1 tablespoons grated lemon zest (2 lemons)

2 tablespoons of all-purpose flour

Confectioners Sugar for dusting on top
