I think I just love any kind of recipes…

But during the week when life is hectic simple easy recipes make life so much easier.  Wouldn’t you agree?  Between shuffling kids to dance, soccer, work, extra activities, reports, homework, time feels like its just flying by… Let alone that January is almost over… ALREADY!



That’s why I love these simple potatoes that go straight in the oven bake and can be paired with any dish.  Plus who can really say no to potatoes when they are baked with grated Parmesan cheese and spices.



Parmesan Crispy Potatoes

Prep Time: 10 minutes

Cook Time: 40 minutes

Yield: 4 servings

Quick easy and absolutely delicious crispy Parmesan potatoes that pair well with any entree.


  • 4 medium Potatoes, skins on, scrubbed and diced
  • 2-3 tablespoons Olive Oil
  • 1/2 cup Parmesan Cheese, grated
  • 1 teaspoon Garlic Salt
  • 1/2 teaspoon Paprika
  • 1 teaspoon Fresh Thyme, chopped
  • Black Pepper, to taste
  • Salt, (for sprinkling after)


  1. Wash, scrub and dice the potatoes all the same size. This will allow for all your potatoes to cook evenly.
  2. In a large bowl, toss potatoes with olive oil, Parmesan, garlic salt, paprika, thyme, and black pepper.
  3. Spread potatoes out in a large casserole dish or a large baking sheet.
  4. Bake at 425 degrees 30-40 minutes, stirring potatoes every 10-15 minutes for even browning.
  5. Sprinkle with salt to taste and serve warm.
