There is nothing like the coming of the holidays that brings me to such a happy place.  I don’t really know what it is, but Once November comes around I get giddy and full of cheer.  I think it has to do with Thanksgiving being my absolute favorite holiday of the year.  Nothing says holidays like baking and cooking with pumpkin.  I wanted to make these absolutely delicious Pumpkin Spice Waffles, but the different thing about these is that not only does it have mashed pumpkin inside of the batter, and pumpkin spices, it also has a cinnamon streusel topping that is baked on top of each waffle and then sprinkled more after its cooked… YUM-O!


In just two days, that’s right I said TWO DAYS November will be here….. Geesh!  I cannot believe that we are almost in November already.  Time is flying by quicker than I can blink.  But anyways, November is almost here and now its time to really get cranking on planning for Thanksgiving… Oh did I mention that this is my favorite holiday yet! 😀

There are so many things to do before hand, I just can’t wait!

Pumpkin Spice Cinnamon Streusel Waffles

Prep Time: 10 minutes

Cook Time: 30 minutes

Yield: 10 waffles

These pancakes are a great to ring in the holidays, who doesn't like cooking with pumpkin especially when they are in pancakes and topped with a cinnamon streusel topping.


    Cinnamon Streusel:
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 6 tablespoons cold unsalted butter, cut into chunks
  • Pumpkin Spice Waffles:
  • 6 Large Eggs
  • 1/3 cup Vegetable Oil
  • 1 cup Milk
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Canned Pumpkin, (not pumpkin pie filling)
  • 1/3 cup Granulated Sugar
  • 2 cups All-Purpose Flour
  • 1/2 teaspoon Sea Salt
  • 1 tablespoon Baking Powder
  • 1 teaspoon Ground Cinnamon
  • 1/4 teaspoon Nutmeg
  • 1 teaspoon Pumpkin Pie Spice


    First, make the cinnamon streusel.
  1. In a medium bowl, combine flour, brown sugar, cinnamon, and butter. Mix together with your hands or a fork, until you have a crumbly mixture. Set aside.
  2. Next make the Pumpkin Spice Waffles:
  3. Preheat your waffle iron to high heat. The hotter the better. That makes the outside crispy and the inside moist.
  4. Beat together the eggs, oil, milk, vanilla, pumpkin, and sugar.
  5. Mix together the flour, salt, and baking powder, cinnamon, nutmeg, and pumpkin spice. Then add the dry ingredients into the wet ingredients. Whisk until smooth.
  6. Once your waffle iron is hot pour mixture into each mold. Before you close the waffle top sprinkle the cinnamon streusel on top of each waffle and cook until golden brown.
  7. After the waffles are finished cooking serve with more streusel on top. Serve with maple syrup and butter.
