Especially since Valentine’s Day is quickly approaching, and those of us who are searching frantically for something delicious to make for their loved ones, I got your back! **wink, wink**
Oh and let me let you in on another secret… you can make these for breakfast, lunch or even dinner **gasp**… we had ours for dinner!
So I leave you now with only this… I think I really, really like you!
Red Velvet Pancakes with chocolate chips
Ingredients
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
6 tablespoons granulated sugar
2 tablespoons unsweetened cocoa powder
2 large eggs
1-1/2 cups buttermilk
1/2 cup sour cream
2 teaspoons red food coloring
4 teaspoons vanilla extract
1/2 cup chocolate chips (doesn’t matter what kind you use)
Directions
Combine all dry ingredients in a large bowl and set aside.
In a separate bowl, whisk together the egg, buttermilk, sour cream, food coloring and vanilla.
Add wet ingredients to dry, and mix just until combined.
Add chocolate chips and fold in batter.
Pour about 1/3 cup onto medium/high griddle and lightly brown on both sides.
Sprinkle powdered sugar on top and serve with maple syrup.
Enjoy!

Thanks. I made them this weekend and it made 14 pancakes (using 1/3 cup of batter per pancake). The last few were a little small though becuase I wanted to make sure I got 14 becuase that is how many servings I put when calculating the points value. Hope this helps anyone else wanting to know how many pancakes it made.

Do you need to use white cocoa powder? I don’t see any brown in the dry ingredients picture. I can’t find white cocoa powder (except online) and when I used Hershey’s unsweetened cocoa powder, it came out too brown and didn’t taste quite right.

Addy,
Yes of course you could. I would really just recommend dividing the wet ingredients together and then the dry together and keep them separated then combine them when your ready. Hope this helps.

Melissa,
No it is unsweetened cocoa powder. It should taste the same with a slight cocoa feel to it. You could always just omit the cocoa powder if the taste isn’t what you like. Hope this helps

I tried this recipe and followed it exactly… but my batter came out really brown and thick and gooey. (I was expecting them to be pink like the picture) They wouldn’t even cook. By the time they were firm enough to turn over, they were already black. I tried to add milk, turn down the grill even more, but no success no matter what I did. The outside cooked, but the inside was still raw. I’ve made pancakes plenty of times, so its not like I’m completely clueless. I had to throw out the rest of the batter. Extremely disappointed
yummy
February 14th, 2012 at 6:59 am
Ashley,
I am so sorry to hear that. I know how disappointing it is to make a recipe your all excited about and then it doesn’t work out. One question how high was your stove on? Did you add the red food coloring, maybe you needed more color. If the batter is too thick you could always add a little milk to thin out. That could of been one of the factors for them browning to quickly and burning. Hope this doesn’t discourage you from making them again.
Hope you have a better day!

These were delicious. I too had a little trouble getting them to cook properly. The first batch looked burned when I flipped them. The second batch I flipped sooner but had a hard time getting them cooked completely. But when we finally ate the first batch I realized they were just dark and not really burned. Adding a touch more milk to thin the batter would probably help a little. I think there is just a slight learning curve to cooking them. Definitely will be making these again and again. Thank you for the recipe. Btw, I found the recipe on Pinterest.
