Thanksgiving is in just 2 days and I cannot believe it!  I love Thanksgiving, it is my absolute most favorite holiday of the entire year.  The smells, colors, decor, and let’s not forget the best part… the FOOD!  This year we are having family come in to town and celebrate with us and just cook, eat, and spend some quality time with each other.  I am so excited I cannot wait!

This year I am not only in charge of making a few dishes for our Thanksgiving feast but I also have a few desserts up my sleeve.  I had rice krispie treats on the brain but wanted to add a little flair with them and of course you know me that usually will entail chocolate of some kind.  I had the pleasure of baking with one of International Delights delicious creamer choices, Salted Caramel Mocha.  Let’s just say, Y.U.M.M.Y.

Salted Caramel Mocha Chocolate Covered Rice Krispie Treats with International Delight

Ingredients

    CRUNCHY LAYER
  • 6 cups Rice Krispies Cereal
  • 3 tbsp Butter, salted
  • 1-10.5 oz. bag Mini Marshmallows
  • 1/4 cup Light Corn Syrup
    • CARAMEL LAYER
  • 15 oz. Soft Caramel Chews
  • 2 tbsp International Delight Salted Caramel Mocha Creamer
  • 1/4 tsp Salt
    • CHOCOLATE LAYER
  • 1-11.5 oz. bag Dark Chocolate Chips
  • 1 tbsp Shortening, (I used Crisco)

Directions

    CRUNCHY LAYER
  1. In a large saute pan, melt butter. Add in the marshmallows and melt over low heat stirring frequently.
  2. Once the marshmallows are totally melted, add in the corn syrup, stir until everything is fully combined.
  3. Pour the Rice Krispies into the marshmallow mixture and fold until everything is evenly coated. Next pour the Rice Krispie mixture into a greased 9×13 Pyrex dish.
  4. Push the mixture down with your fingers until you have a flat, even layer.
    5. CARAMEL LAYER
  5. Place the unwrapped candies, creamer and salt in a large microwave safe bowl. Microwave on high for about 3 minutes, making sure to stop every minute or so to stir the mixture.
  6. Once it is all evenly melted, pour the caramel mixture on top of the 1st layer (crunchy layer) and spread evenly with a spatula.
    7. CHOCOLATE LAYER
  7. Place the chocolate chips and shortening in a microwave safe bowl and microwave in 30 second intervals – stirring in between.
  8. Once the chocolate and shortening are evenly melted and mixed, pour the chocolate mixture over the caramel and rice krispie layer and spread evenly.
  9. Once all is layered, place dish in the refrigerator for an hour for it to set.
  10. When you’re ready to cut it into squares use a sharp knife and run it along the sides of the dish to help the rice krispies separate from the pan.
  11. Slice and serve.
