Back to School with Rainbow Pancakes

Back to school time is here! Can you believe it already… Summer is over!  I still am trying to wrap my head around it because time has literally flown by.  If you’re anything like me you are probably having mixed emotions, a little sad because summer is over and full on excited because school is here and that means new teachers, new friends, and for some even new schools.  Some kids feel nervous especially beacuse of all the “new” that is going on.  The great thing about the first week of school is that all of those scary nervous feelings go away and then the fun begins.

This past thursday I had the pleasure of meeting my kids new teachers and let’s just say they are Fabulous.  I definitely feel blessed that each year my children have had the blessings of great teachers.  I cannot believe that my son will be going into Fourth grade and my daughter First.  Feels like just the other day I was bringing each one home from the hospital for the first time.

Every day is a blessing to see my children’s smile and their excitement to start a new year.  Watching them grow and seeing life thru their eyes is amazing.  That’s why I knew a stack of Rainbow Pancakes would be the perfect start to the first day back to school.  I hope you enjoy them with your little ones as much as I did mine. 🙂

Rainbow Pancakes

All you need is your favorite pancake batter, I used my buttermilk pancake recipe, and food coloring.  Just want to send a shout out Amanda from i am Baker, it’s through her that gave me this great idea for Rainbow Pancakes, oohhhh and if any of you have time go over to her blog and look at all of the yummy things she bakes, fantastic… 😉
