Bacon, Egg and Cheese Wrap

Why not start your work week differently than usual and make it a bang from the beginning!  Wrap your breakfast in a hot tortilla, with scrambled eggs, crispy bacon, and melted cheese… Sounds yummy eh…… Did you know that you can actually freeze these bad boys and just pop them out when your in a real rush… Sounds pretty easy!

It’s Monday and although you maybe rushing into the office take 5 minutes and make something that will brighten up your day and fill your tummy as well!

Bacon, Egg and Cheese Wrap


4 eggs

2 tablespoons milk

1 teaspoon butter

1 cup (4 ounces) shredded cheddar cheese

4 strips of bacon

salt/black pepper

2 flour tortillas (8 inches), warmed


Cook bacon slices on medium heat, turning every so often.  Drain and place to the side.

In a small bowl, whisk the eggs, milk, salt and pepper. In a large skillet, heat butter. Add egg mixture; cook and stir over medium heat until eggs are completely set. Stir in cheese.

Sprinkle cheese, spoon egg mixture, sprinkle more cheese, and place bacon slices down the center of each tortilla; roll up.

Serve immediately, or wrap in plastic wrap and freeze in a resealable plastic bag.


To use frozen wraps: Thaw in the refrigerator overnight. Remove plastic wrap; wrap tortilla in a moist microwave-safe paper towel. Microwave on high for 30-60 seconds or until heated through. Serve immediately.
